Cheesemaking Weekend

Samantha Gasson of Bull City Farm in Durham NC is taking over the Riverstone Farm Kitchen for a class all about fresh cow cheeses. Making cheese can be a daunting prospect with all the different bacterias, molds and coagulants to choose from. This class is designed for the beginner kitchen cheese maker, to demystify the age old process. The basics you will learn about fresh cheeses are the entry point for making all kinds of cheeses including more complex and aged cheese. Bring a sample of your favorite cheese to the class, we will taste and discuss how they are made. Saturday we will begin making three fresh cow cheeses and a farm fresh lunch will be included, and participants will take home some cheesemaking supplies of their own. Sunday, we will finish the cheeses and sample the finished product. Adults and children 10+ are welcome. Rain or Shine. (Maximum 15 participants)
